Vegetable Stir Fry

This Vegetable Stir Fry is great as a dinner on its own, or as a side to a protein main dish like, say, Fried Crispy Chicken. Or even fresh-caught pan-fried fish, seasoned simply with salt and pepper, and served with a squeeze of lemon.

METHOD

1.

Heat a medium-sized pan or wok with enough oil to cover the surface.

2.

Saute the vegetables (not including corn) in the oil for a few minutes, then add the peanut butter and corn. Cook for another 1-2 minutes, and add a little water or broth if necessary.

3.

Season to taste, garnish with sesame seeds, and serve with brown rice.
