Sweet Potato Waffles

Sweet potatoes for breakfast don’t always have to be a hash or a fritter. These Sweet Potato Waffles are a great gluten-free alternative to the regular wheat kind. Drizzle them with maple syrup and garnish with fresh strawberries and blueberries, or dollop yoghurt on top and drizzle with honey or maple syrup.

METHOD

1.

Place all the ingredients in a bowl and mix them until a light orange batter forms.

2.

Preheat your waffle iron and spray it with coconut oil.

3.

Pour 1/4 to 1/3 cup waffle mixture onto the preheated iron, close the lid, and cook for approximately one minute (time will vary according to waffle iron or pan and temperature settings).

INGREDIENTS

  • 1 cup sweet potato puree (I steamed half a large sweet potato, skin off, and then mashed it)
  • 1 cup rice flour
  • 1 cup rice milk (VitaSoy calcium-enriched brand recommended)
  • 1 free-range egg
  • 1/2 tsp pure vanilla extract
  • 4 tbsp 100% Canadian maple syrup
  • 1/2 tsp ground cinnamon
  • 1 tbsp ghee
