Sticky Date Pots

These Sticky Date Pots are a sugar-free, GAPS-friendly version of the familiar, autumn favourite sticky date pudding. Instead of sauce made from caramelised sugar, we make sauce from dates! This delicious dessert recipe was developed and graciously shared by Paediatric Nutritionist Katie Joubert.

These are great served warm, with sweet-but-tart fruit like strawberries and mangoes on the side, or tart and thick Greek yoghurt, or a tall glass of cold milk.

INGREDIENTS

METHOD

1.

Grease small ceramic ramekins.

2.

Preheat oven to 180°C.

3.

Soak dates in boiling water for at least 10 minutes.

Remove dates but keep the water.

5.

In a food processor, add the water, butter, and almond meal. Blend until smooth.

Add eggs, spices, bicarb soda and coconut flour, and blend till smooth.

Chop the soaked dates and add to mixture.

Pour mixture into ceramic ramekins and bake for 35 minutes, then cover with foil and bake for a further 20 minutes.

To make the sauce:

Soak the dates for the sauce in 300ml of boiling water for at least 10 minutes.

Blend dates and 50g butter until smooth, then add the date water little by little until you reach desired consistency.

Pour over individual dishes -- you can serve in the dish or try to remove them and put them on a plate.

  • 100g butter
  • 250g pitted dates
  • 200g almond meal
  • 20g coconut flour
  • 3 eggs
  • 1 1/4 tsp bicarb soda
  • Pinch of salt
  • Pinch of ground cloves
  • 1 tsp cinnamon
  • For the sauce:
  • 100g pitted dates, roughly chopped
  • 50g butter
