Spelt Pancakes

Spelt flour is much more densely packed with nutrients than the regular wheat flour, and even whole wheat flour — the very epitome of a whole food. So if you want a supercharged breakfast to start your day, try these Spelt Pancakes.

Even better: spelt is sweeter than regular wheat flour and has a mild, nutty flavour. It’s also a lighter grain, which means fluffier pancakes.

Serve with fruit, cream, honey, maple syrup, butter, or any combination of those, plus a glass of cold milk on the side.

METHOD

1.

In a mixing bowl, whisk the eggs, then add the milk and vanilla extract. Mix.

2.

Add the flour and baking powder, and mix until smooth.

3.

Heat a large skillet just above medium, and add just enough butter to lightly coat.

4.

Cook until the sides of the pancakes firm up, and a bubble or two escapes from the top, about 3-4 minutes.

5.

Carefully flip the pancakes, cook an additional 45 seconds to 1 minute, then repeat with remaining butter.

6.

Serve with fruit of choice.
