Paleo Porridge

This Paleo Porridge is full of primal goodness: it’s got all the superfoods and nutrients you need to get a good head start.  Not quite how our ancestors started the day, because we’re pretty sure they didn’t have vanilla extract or almond butter, but who’s complaining? Try it with a Banana Berry Spinach Smoothie.

METHOD

1.

Mix together the banana, flaxseed, egg whites, hemp, and milk in a small bowl with a blender or whisk. Make sure there are no lumps.

2.

Put the mixture in a saucepan over medium to high heat. Add the rest of the ingredients except the butter, and whisk for 5-8 minutes until the porridge becomes creamy and only slightly lumpy.

3.

Serve with sliced bananas or fresh berries.

INGREDIENTS

  • 1 tsp vanilla extract
  • 1 tbsp almond butter
  • 3/4 cup egg whites
  • 1 medium banana, mashed
  • 1/2 cup almond or coconut milk (VitaSoy calcium-enriched brand recommended)
  • 2 tbsp ground golden flax seed
  • 2 tsp hemp hearts
  • 2 tsp ghee
  • 1/2 tsp ground cinammon
  • Pinch of salt
  • Sliced banana or berries, to garnish (optional)
