Korean Fried Chicken

METHOD

1.

Season chicken with salt, cover, and chill 8-24 hours.

2.

Mix garlic, ginger, soy sauce, kimchi, maple sugar, lemon, honey, rice wine, vinegar, and pepper in a saucepan. Bring to a boil, then reduce heat and let it simmer, stirring, until slightly thickened, about 5 minutes. Strain sauce and set aside.

Pat chicken pieces dry and dredge with potato flour.

Working in batches, deep-fry chicken pieces in 300° oil until golden, about 5 minutes. Turn constantly to make sure it’s evenly cooked. Let cool on a rack.

Increase oil temperature to 375°. Fry chicken again in batches until golden and crisp, about 5 minutes. Transfer to cooling rack.

6.

Brush with sauce and sprinkle with sesame seeds. Serve with hot rice.

INGREDIENTS

  • 3 lbs chicken (wings or breast strips)
  • 2 teaspoons salt
  • 6 cloves garlic, coarsely chopped
  • 3 Tbsp ginger, coarsely chopped
  • 1 cup plus 1 1/2 Tbsp soy sauce
  • 2 Tbsp kimchi, minced
  • 1 Tbsp maple sugar or coconut sugar
  • 2 Tbsp lemon juice
  • 2 Tbsp honey
  • 2 Tbsp rice wine
  • 2 Tbsp rice vinegar
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup potato starch
  • Peanut or vegetable oil (for frying)
  • 1 Tbsp sesame seeds
