Kimchi Omelette

Protein, healthy fats, fibre, and probiotics — this Kimchi Omelette has it all! You and your kids will love the savoury flavours so much, you’ll want it for lunch and dinner as well!

Other vegetables like broccoli, mushrooms, cauliflower, and spinach can replace or be added to the zucchini. If dairy isn’t a problem, a sprinkling of parmesan cheese just before the eggs set is a delicious way to finish it off.

Kimchi Omelette
INGREDIENTS

METHOD

1.

In a bowl, crack eggs. Pour in coconut milk, and season with salt and pepper. Beat or whisk until just combined.

Heat oil in a skillet over medium. When the oil starts to shimmer, add the green onions, zucchini, and kimchi. Stir-fry for 2 minutes, or until the zucchini starts to soften.

3.

Pour in egg mixture and stir lightly just to make sure all ingredients are evenly distributed. Cover skillet for a minute or until the egg is almost set. Fold omelette in half and cook until desired doneness.

4.

You can stir in ground beef or shredded chicken for added protein. Brown/fully cook the meat before adding vegetables to skillet.
