Healthy Vegetable Fritters for Kids

These fritters are absolutely delicious AND chockfull of delicious veggies! I managed to sneak 2 zucchini, 1 Carrot and  1 Sweet Potato into the batter, alongside a huge handful of fresh herbs. They are Freezer friendly and perfect for school lunches!
INGREDIENTS
METHOD

  • 1 Medium Carrot, grated
  • 2 Medium Zucchini, grated
  • 1 small Sweet potato, grated
  • 1 can of corn kernels, drained
  • Small handful Basil leaves, finely chopped
  • 1 zest of lemon
  • 1 cup Plain flour
  • 4 Eggs
  • tablespoon olive oil, to fry in tomato wedges
  • 1 Tomato - cut into wedges to serve

METHOD

1.

Place the carrot, zucchini, sweet potato, corn, basil, lemon zest, flour and eggs into a large mixing bowl.

2.

Mix until thoroughly combined.

3.

Heat a non stick frypan to low – medium heat and drizzle in a little olive oil.

4.

Cook for 3-5 minutes or until golden, flip each fritter and cook for another 2-3 minutes.

5.

Place the cooked fritters onto a plate lined with kitchen paper and continue to cook until no batter remains.

6.

Serve alongside a simple salad of tomato wedges and basil leaves.
