Green Beans

Simple and elegant, Green Beans are a great way to add colour, fibre, and a flavour counterpoint to your Christmas dinner table. Garlic adds savoury depth while the lemon balances with a bright punch.

INGREDIENTS
  • 30 MINS

METHOD

1.

Steam the beans until just tender.

2.

Transfer them to an ice bath to stop them from cooking further.

3.

Toss the flaked almonds in a pan to roast — be careful not to burn.

4.

Remove the almonds and add the garlic.

5.

Add the almonds to the garlic and give them a mix.

6.

In a bowl, coat the beans with olive oil and lemon juice.

7.

Add the flaked almonds and lemon zest on top.

INGREDIENTS

  • 400g green beans
  • 1/2 cup flaked almonds
  • Olive oil
  • 1 clove garlic, diced or thinly sliced
  • Zest and juice of a lemon
  • Salt and pepper, to taste
