Eggs in Tomato Sauce

These Eggs in Tomato Sauce are perfect for breakfast, lunch, and dinner — even a snack if you feel like it! Originating from Israel, this dish, which they call shakshuka, is usually a breakfast meal. It’s also significantly spicier, as they add plenty of chilis.

This version won’t have that kick of heat to perk you up, but the bright and savoury tomato sauce is more than enough to ensure a great start (or finish!) to the day.

INGREDIENTS

METHOD

1.

Heat olive oil in a large skillet over medium. Add onions and sauté until it starts to soften. Add garlic and continue to sauté until it becomes fragrant. Add peppers and stir occasionally until softened.

Add tomatoes and tomato paste to the mixture and stir. Season with cumin, paprika, salt, and pepper. Simmer over medium low, stirring occasionally, until the liquid reduces, 5-7 minutes.

Crack eggs one by one into the mixture, being careful not to break the yolk (you can crack each egg into a bowl then slip it into the tomato sauce). Cover the skillet and cook eggs to desired doneness: 2-3 minutes for runny yolks, 10-15 minutes for firm, completely cooked yolks. Garnish with parsley.

Serve warm with fried sweet potatoes, fried carrots, or crusty gluten-free bread for dipping. Steamed green beans or steamed asparagus also work well.

INGREDIENTS

  • 1 tbsp olive oil
  • 1/2 medium brown or white onion, peeled and diced
  • 1 clove garlic, minced
  • 1 medium green or red bell pepper, diced
  • 4 cups ripe diced tomatoes, or 2 cans (14 oz. each) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 6 eggs
  • 1/2 tbsp fresh chopped parsley (for garnish)
