Coconut Cinnamon Bread

This Coconut Cinnamon Bread is a great base recipe for coconut-based, gluten-free bread. As it is, this is great for a quick snack: lightly toast it and spread casein-free cheese on top, then drizzle with honey. It’s best if you do it quickly — the warm toast contrasting with the cold cheese is just divine. Lightly buttering (casein-free of course), toasting and then turning into toast soldiers, or making sandwiches are all great ideas, too. Great served with a glass of cold milk, casein-free or otherwise.

METHOD

1.

Preheat oven to 180°C/350°F.

2.

Mix all ingredients together in a bowl until well combined.

3.

Grease a loaf pan with the oil, pour in bread batter, and bake for about 35 minutes, or until golden brown. Push a toothpick into a spot near the middle of the bread -- if it comes out clean, it's cooked.
