INGREDIENTS

  • 1 Can Chickpeas, drained and rinsed
  • 1 Red Onion
  • 1 Cup Carrot, grated
  • 500g Sweet Potato
  • 2 Tablespoons Cheddar Cheese
  • 1 Cup Sesame Seeds
  • 2 Tablespoons Herbs
  • 2 Tablespoons Wholemeal Flour

METHOD

1.

Preheat oven to 180 degrees and line a baking tray with non-stick paper

2.

Steam or boil the sweet potato until soft, drain, mash roughly and cool

3.

Puree chickpeas roughly in a food processor

4.

Combine the sweet potato, chickpeas, onion, carrot, herbs, flour and cheese in a bowl

5.

Divide the mixture into 10 portions and shape into patties

6.

Press each patty into sesame seed mix

7.

Place patties on the baking tray and bake for 15 minutes

8.

After 15 minutes flip patties over and bake for a further 15minutes or until golden brown

9.

Serve the patties with a garden salad (lettuce, tomato, cucumber, carrot) and Zoe’s avocado dip!
