Tropical Prawn Ceviche
- 450g prawns, peeled and deveined
- 4 limes, zested and juiced
- 1 lemon juice
- 1 medium-sized chili (not the hot kind), deseeded and finely chopped
- 1 mango, chopped into the tiniest of cubes
- 2 cups watermelon, chopped into cubes
- 1 ripe avocado, cut into cubes
- Chopped dill
- Salt and pepper, to taste

Cut the mango, watermelon, and avocado into cubes. I like to make the mango cubes smaller than the avocado and watermelon.
Transfer the prawns into a serving dish leaving the cooking juice aside for later.
Mix the prawns with mango, watermelon, avocado, dill, and chili.
Garnish with salt and pepper and lime zest.
Drizzle the cooking juice over the dish.
