Prawn, Pomegranate, and Orange Salad
- 4 cups mixed leafy salad greens
- 1/4 red onion, finely sliced
- 1 avocado, sliced
- Arils from 1 pomegranate
- 1/2 large orange, cut into segments
- 12 cooked and peeled prawns (tails intact)
- 1/4 cup freshly-squeezed orange juice
- Juice of 1/2 lime
- 1 tbsp olive oil

Make salad dressing by combining orange juice, lime juice, and olive oil. Set aside.
In a large mixing bowl, gently mix salad greens with onion, avocado, pomegranate arils, and orange. Pour dressing and toss gently to coat well.
Transfer salad to a serving plate and top with prawns. Serve immediately.
