Yoghurt and Berry Parfaits
- 1 cup coconut or almond yoghurt (CO-YO brand recommended)
- 1 cup quinoa, rinsed in a sieve and strained well
- 1/3 cup sunflower seeds
- 1/2 tsp cinnamon
- 1/2 tsp pure vanilla essence
- 1 tbsp rice malt syrup
- 1 tbsp chia seeds for sprinkling
- 1/2 cup mixed berries (strawberries, blueberries, raspberries, blackberries, cranberries, or a mix)
- 2 tbsp coconut flakes
- Raw honey, to garnish

Preheat oven to 190°C.
Place quinoa, sunflower seeds, cinnamon and vanilla essence in a bowl. Drizzle with rice syrup and mix together.
On a baking sheet, spread the mix in a thin layer and bake for 10 minutes.
Remove from the oven and let cool, then break into little pieces.
Place one layer of yoghurt in a glass cup, followed by a layer of crunch, then fresh berries. Continue until the glass is filled, garnish with chia seeds, and drizzle with raw honey.
