These Yoghurt and Berry Parfaits are a real, honest-to-goodness treat, and a feast for the eyes, as well! The layers of sweet, creamy yoghurt, crunch, and tangy berries are a great contrast. There's no way something this delicious could be so healthy, and yet here we are.
INGREDIENTS
METHOD

  • 1 cup coconut or almond yoghurt (CO-YO brand recommended)
  • 1 cup quinoa, rinsed in a sieve and strained well
  • 1/3 cup sunflower seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp pure vanilla essence
  • 1 tbsp rice malt syrup
  • 1 tbsp chia seeds for sprinkling
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries, blackberries, cranberries, or a mix)
  • 2 tbsp coconut flakes
  • Raw honey, to garnish

Preheat oven to 190°C.

Place quinoa, sunflower seeds, cinnamon and vanilla essence in a bowl. Drizzle with rice syrup and mix together.

On a baking sheet, spread the mix in a thin layer and bake for 10 minutes.

Remove from the oven and let cool, then break into little pieces.

5.

Place one layer of yoghurt in a glass cup, followed by a layer of crunch, then fresh berries. Continue until the glass is filled, garnish with chia seeds, and drizzle with raw honey.
