- 1 cup walnuts
- 1/2 cup sunflower seeds
- 200g medjool dates, pitted
- 1/2 cup cacao
- 1 pinch Himalayan pink rock salt
- 1/2 cup extra walnuts, chopped
- 1/2 cup coconut oil (topping)
- 1/2 cup cacao (topping)
- 1/4 cup brown rice malt syrup, plus a pinch of Himalayan pink rock salt (topping)

Blend the walnuts and sunflower seeds in a food processor until they're of a fine consistency.
Add the dates and blend until the dates have been broken down and the mixture is sticky. Add cacao and salt, then blend for a further 10 seconds.
Add the extra chopped walnuts and stir by hand so they don't get broken down too much in the processor.
Press the mixture into a lined tin and freeze for 15 minutes or until hard to the touch.
In a bowl, combine the coconut oil, cacao, salt and rice malt syrup. You can either microwave it for approximately 1 minute until the mixture is well combined, or if you have a temperature gauge on your mixer, set it to 70C for 1 minute.
Pour the topping over the slab and freeze for an hour or until set.
Once set, cut into small squares, top with a walnut (optional) and enjoy!
Serve brownies with a side of fresh fruit.
