Almost anything fried is an instant favourite with kids, and these Zucchini Fritters are no exception. Serve them hot and freshly made, or pack them for lunch. Optional: add a few teaspoons of "Superfoods for Kids," a veggie powder, to really boost the nutritional content. Recipe developed by Kris Barrett.

METHOD

1.

Beat eggs and remaining ingredients.

Season to taste.

3.

Heat a small, non-stick frying pan over medium heat.

4.

Spoon tablespoonfuls of the mixture into the pan, leaving room for the mixture to spread.

5.

Cook for 2 minutes each side.
