White Bean and Cauliflower Pasta

This White Bean and Cauliflower Pasta is the perfect way to get your kids to eat vegetables without them realising it. Garlic and shallots add warmth to the otherwise bland veggies. Serve with your favourite gluten free pasta and garnish with fresh herbs (parsley is great), or drizzle over steamed seasonal vegetables. This recipe is gluten free, casein free, and optimal for gut health.

METHOD

1.

Cook the cauliflower in a pot of boiling water for a few minutes until tender.

Put a saucepan over medium heat. Add oil, the shallots and the garlic, and cook until fragrant.

3.

In a blender, combine the cauliflower with the shallots and garlic, add the beans, almond milk, and lemon juice. Blend until smooth.

4.

Once the mixture is smooth, season to taste with salt and pepper. Cook until consistency is to your liking, and add a dash of water or almond milk if needed.
