White Bean and Cauliflower Pasta
- 2 cups cauliflower, roughly chopped
- 1 shallot, sliced
- 3 tbsp oil
- 3 cloves garlic, crushed
- 1 cup white beans, cooked
- 1 1/4 cups almond milk (we recommend VitaSoy calcium-enriched)
- 1/2 lemon, juiced

Cook the cauliflower in a pot of boiling water for a few minutes until tender.
Put a saucepan over medium heat. Add oil, the shallots and the garlic, and cook until fragrant.
In a blender, combine the cauliflower with the shallots and garlic, add the beans, almond milk, and lemon juice. Blend until smooth.
Once the mixture is smooth, season to taste with salt and pepper. Cook until consistency is to your liking, and add a dash of water or almond milk if needed.
