  • 2 Tablespoons Extra Virgin Olive Oil

INGREDIENTS

  • 500-750g Lamb Mince
  • 2 Red Onions
  • 2 Cups Carrot, grated
  • 2 Cups Zucchini, grated
  • 1 Can diced tomatoes
  • 4 Tablespoons Salt reduced Tomato Paste / Puree
  • 1 Clove of Garlic
  • 2 Tablespoons Extra Virgin Olive Oil
  • Topping
  • 500-1000g Sweet Potato
  • 2 Tablespoons Olive Oil
  • 1 Cup Cheddar Cheese

METHOD

1.

Heat half the olive oil in a large pot on high heat

2.

Add mince and brown, take off the heat and set aside

3.

Add onion and sauté for 1-2 minutes or until lightly brown

4.

Stir in garlic, tomato paste and diced tomatoes, cook until tomatoes soften

5.

Add mince back into the pot and stir to combine

6.

Add carrot and zucchini to the pot, place lid on and bring to the boil and simmer for 20-30min

7.

Put spoonful’s of mixture into individual ramekins or half mixture and place in 2 large pie dishes

8.

Topping: steam sweet potato and puree with olive oil

9.

Top mixture with mashed sweet potato and grated cheese. Bake at 180 degrees for 15-20 minutes until cheese has melted
