Sesame Squares

These sesame squares take about 10 minutes to make, then you simply pop them in the fridge over night to set, these are the easiest snacks ever and so packed full of healthy fruits, seeds and nuts! My kids love them!

  • ½ teaspoon cinnamon
  • ½ cup flaked almonds
  • 10 dried apricots
  • ¼ cup goji berries
  • 2 tablespoon cranberries
  • 1 tablespoon water
  • 1 cup pitted dates
  • 1 cup sesame seeds

METHOD

1.

Grease and line a 20cm x 20cm square pan/tray with plastic wrap.

2.

Lightly toast sesame seeds in a small frying pan over a low heat until slightly golden. Set to one side.

3.

Place dates and water in a food processor and process to a smooth paste

4.

Add remaining ingredients, except for sesame seeds, and pulse until mixture is combined.

5.

Add sesame seeds to the food processor and pulse once more to incorporate.

6.

Pour sesame mixture into the prepared tray and press firmly to flatten.

7.

Refrigerate overnight to set. Turn out of tin, remove plastic wrap and cut into desired sized squares.
