INGREDIENTS

  • Extra toasted coconut, to decorate
  • 2 tablespoons coconut nectar or honey

METHOD

1.

Combine coconut milk, shredded coconut and coconut nectar in a jug. Stirring until incorporated.

2.

Pour into icy pole moulds and freeze for 1-2 hours.

3.

Press in wooden icy pole sticks and return to the freezer for a further 2-3 hours or until frozen through

4.

To finish, dunk the mould into warm water to until the water comes to around 2/3 up the sides. Ensure not to fully submerge. Release the icy poles from the mould and quickly press into the extra coconut so that the coconut sticks and serve.
