  • 100g pitted dates, roughly chopped

METHOD

1.

Grease small ceramic ramekins.

Preheat oven to 180°C.

Soak dates in boiling water for at least 10 minutes.

Remove dates but keep the water.

5.

In a food processor, add the water, butter, and almond meal. Blend until smooth.

Add eggs, spices, bicarb soda and coconut flour, and blend till smooth.

7.

Chop the soaked dates and add to mixture.

Pour mixture into ceramic ramekins and bake for 35 minutes, then cover with foil and bake for a further 20 minutes.

To make the sauce:

Soak the dates for the sauce in 300ml of boiling water for at least 10 minutes.

Blend dates and 50g butter until smooth, then add the date water little by little until you reach desired consistency.

Pour over individual dishes -- you can serve in the dish or try to remove them and put them on a plate.
